Choc Chip Blondies
(Gluten and dairy free)

I must say I was a tad excited when I saw this in the kitchen....even more than the dishwasher!
This is the type of oven I have always dreamed of!
This new house and awesome house mates have been a real blessing and an answer to prayer. Thank you to my gorgeous family and awesome friends for helping me with the move.
So, very excited to try out this recipe from Meaningful Eats in my new oven...after a stressful week, this was an excellent stress reliever. Baking has that effect on me. I made a few alterations to the recipe for what worked for me. I hope it works for you too!
Ingredients
1/3 cup coconut oil (slightly solidified)
1/2 cup brown sugar
1/3 cup white sugar
2 eggs
2 teaspoons vanilla
150g packet of almond meal
1 tsp baking powder
1/2 tsp salt
1 1/2 cup dark choc chips
1/2 cup chopped pecans or almonds
What to do
1. Preheat oven to 180'C. Line a brownie tray with baking paper.
2. Beat with a mixer the coconut oil and sugars until creamed. Add the vanilla and eggs and mix for a couple of minutes until light and fluffy.
3. Add the almond meal, baking powder and salt and mix. Then add the choc chips and nuts, combine well.
4. Spread the mix into the tray. Bake for around 20-30 minutes (depending on your oven) until golden and firm to touch. Allow to cool. If it is still moist/slightly doughy in the centre, stick in the fridge to solidify. Slice and eat!
