Sticky Date Chia Pudding

I love a good rich sticky date pudding...dripping in rich caramel sauce, topped off with pools of melting vanilla icecream. Oh my!

Now, I'm not going to set your expectations that high. This is a breakfast food. It is dairy free and gluten free and paleo. It does not contain lashings of cream and butter. And I don't think I would be able to get this one would past my brother as a 'healthy' replacement of a standard treat.

However, when I ate it this morning, all that my mind could think of was sticky date...so I am sure that is an excellent starting point.

Make It, Bake It, Fake It


Now, what to do. Remember this is a Make It, Bake It, Fake It original recipe. So standard measurements are pout the window, and you will have to rely on the Kate method of measurement...good old intuition. This is also a make well ahead recipe. I recommend 30 hours plus...sorry about that!


Sticky Date Chia Pudding

What you need:


  • Chia seeds- 1/4 cup or so
  • Chopped dried dates- a generous handful
  • Milk of choice- I use So Good Unsweetened Almond Coconut milk- 1 cup to start
  • Maple Syrup- Super generous slurp
  • Vanilla Essence- Small slurp

What to do:

  • Combine all items in a larger than anticipated container or jar. Stir well. 
  • Place in fridge. Stir a couple of times. Add more milk if it is getting clumpy.
  • Serve in a day or so. I like my chias well soaked, and with this one the dates break down and get all gooey. Yum.
  • Serve with fruit and nuts or paleo muesli.
