Paleo Chicken Burgers
I have just spent the past 3 weeks travelling through the USA. I decided during this time, as I was not the one doing the cooking, it was easier to deal with the consequences of eating the dairy/gluten etc that make me feel rubbish. Really on the balance scale trying to figure out if feeling (more) lousy, was better than exerting more energy to chase down paleo style meals. So I went with diet rules out the window. Now I am back on the straight and narrow, and hoping to feel a ton better soon.

So, I hadn't been to the supermarket since arriving in the country, and had some chicken mince, alongside the awesome veggies we get from our 'co-op'. Along came chicken burgers with nut seed butter satay, roasted veggies and avocado.

Paleo Chicken Burgers

(A reminder, that this is a throw together meal, and measurements are not necessarily accurate!)

Chicken patties

500g chicken mince
2 eggs
1/8 cup coconut flour
Chopped shallot (reserve 1/4 for sauce)
Salt and pepper
Chopped handful of coriander (reserve 1/4 for sauce)

1. Mix all together and shape into burger patties.
2. Spray hot fry pan with oil and cook patties on each side until cooked through.

Nut butter satay sauce

2 tablespoons nut butter of choice
3 tablespoons coconut cream
Squirt lime juice
Set aside coriander and shallot
1 tsp honey
Few drops of Tabasco sauce

Stir all together. Warm up if necessary!

Serve on lettuce leaves with avocado, veggies of choice including some roast vegetables such as zucchini, pumpkin, carrot and beetroot.
